How tray pricing works
Eggs in Kenya are traded in trays of 30, the standard unit at depots and markets. A crate (2 trays, 60 eggs) is the usual bulk unit for restaurants, bakeries, and other high-volume buyers - crate prices are typically a small discount off 2x the tray price rather than an exact multiple, since buying in bulk usually earns a break.
Retail (single trays, individual eggs) usually costs more per egg than wholesale (crates, multi-tray orders), since the depot's margin covers smaller, more frequent handling. Prices also move with feed costs, season, and supply - see PoultryCalculator for how feed cost and production rate feed into what a producer needs to charge.
Egg types
Table eggs
Standard commercial eggs from caged or barn-housed layers - the everyday tray at any depot.
Free-range eggs
From hens with outdoor access rather than confined housing - usually a premium over table eggs.
Organic eggs
From hens fed certified-organic feed with no synthetic pesticides/fertilizers in production - a further premium tier.
Fertile eggs
Laid where a rooster runs with the flock, capable of hatching - sold for incubation, not the table.
Hatching eggs
Fertile eggs specifically selected and handled for incubation - graded for shell quality and size, not eaten.
Quail eggs
A different bird and market entirely - smaller, priced and sold per piece rather than by the tray.
Freshness & storage
- Fresh eggs sink in water; a floating egg is old and best discarded.
- Store pointed-end down to keep the yolk centred and the air cell stable.
- Refrigerated eggs last 4-5 weeks; at room temperature, use within about a week.
- Keep eggs in their tray or carton - the shell is porous and absorbs odours easily.
